Commissary Kitchen Traceability: Follow Ingredients into Store Deliveries
Connect central-kitchen ingredient receipts, preparation runs, and delivery destinations with recoverable source evidence.
Define the workflow and its evidence
Map supplier receipt, storage, preparation, packaging, and delivery by physical address. Review foods, output forms, activities, and exemptions; the commercial label commissary does not settle applicability.
Name the owners of specification review, production evidence, and delivery records. Document stable identifiers at each system boundary and who resolves unmatched records.
Work through a concrete handoff
A kitchen prepares fresh-cut vegetable packs for five restaurants. Preserve the actual ingredient lots used in each run and connect output to deliveries. A menu and total purchase quantity cannot identify a pack’s source lots.
Capture recipe revisions and substitutions. Do not infer historical ingredients from the recipe currently displayed in the kitchen system.
Test the failure before scaling
Remove one destination reference from an output’s delivery sheet. Retrieval must show an incomplete distribution picture rather than confidently list only destinations that join.
Ask another shift to recover the source records for one delivered output. The process should work without relying on the cook who remembers the run.
